This is a fabulous brine recipe that produces a moist and flavorful turkey. Use your favorite beer or try a seasonal craft brew with hints of pumpkin or cranberry. Whichever you choose, offer it to beer drinking guests with dinner. It will complement the turkey perfectly.
- 1 ½ gallons water (24 cups)
- 1 six-pack of beer
- 1 ½ cups KOSHER salt (table salt will make this brine too salty)
- 3 T minced fresh garlic
- 1 T fresh ground pepper
- ½ cup Colonel Pabst Worcestershire Sauce
- ½ cup dark brown sugar
In a container large enough to hold your turkey, mix all ingredients. Add turkey and soak in the brine for two-three days before roasting or smoking.
